INGREDIENTS FOR 2 PEOPLE
• 240 g LikeMeatHack
• 1/2 red pepper, finely diced
• 1/2 green pepper, finely diced
• 300 g tomatoes, peeled, deseeded and quartered
• 1/2 zucchini, finely diced
• 1/2 aubergine, finely diced
• 1/2 large onion, finely chopped
• 2 tbsp olive oil
• 2 tbsp tomato purée
• 400 g can kidney beans
• 140 g can sweetcorn
• 2 sprigs of flat leaf parsley, chopped
• 200 ml vegetable stock
• 2 pinches of Cayenne pepper
• 2 pinches of Chili powder
Heat the oil in a pan and sauté the onion over a medium heat. Add the tomato purée and half of the tomatoes and finely blend.
Meanwhile, fry the mince in oil, season with salt and pepper. Finally, add the beans, sweetcorn and remaining vegetables and quickly fry. Pour in the stock and season with Cayenne pepper and chili powder. Slowly bring to the boil, then simmer over a low heat for around 12-15 minutes.
Transfer into a large bowl and sprinkle with parsley.
Serve with rice or bread.
