RECIPE FOR 2 PEOPLE

• 360 g LikeMeat doner-style kebab chunks
• 1 pinch of salt
• 1 pinch of cayenne pepper
• 2 tbsp sugar + 1 tsp sugar
• 50 g walnuts or pecan nuts, finely chopped
• 1 small zucchini (green or yellow) washed, diagonally sliced
• Approx. 4 tbsp olive oil
• 100 g quinoa
• 1 garlic clove, finely chopped
• 1 tbsp Dijon mustard
• 2 tbsp light balsamic vinegar
• 10 sprigs each of mint and chives, roughly chopped, cut into small rings
• 2 sprigs of tarragon, roughly chopped
• Baking paper

ZUTATEN FÜR 2 PERSONEN

• 240 g LikeMeat Filetstücke Döner-Art
• 
2 große Backkartoffeln (à ca. 350 g), gewaschen
• 
200 g Artischockenherzen aus der Dose, geviertelt
• 
100 g Kirschtomaten, geviertelt
• 
2 Lauchzwiebeln, in feine Ringe geschnitten
• 
8 Zweige Oregano, grob gehackt
• 
40 g schwarze Oliven (ohne Stein), in feine Scheiben geschnitten
• 
ca. 2 EL Olivenöl
• 
Salz
• 
Pfeffer
• 
4 EL Kräutercreme, vegan
• 
Alufolie

PREPARATION

Caramelise sugar in a pan. Fold in salt, cayenne pepper and nuts then spread out over a tray covered in baking paper. Allow to cool. Cover a second baking tray with baking paper. Mix the zucchini with the oil and salt and spread out over the tray. Place the tray with the zucchini in the oven for approx. 7 minutes (electric oven: 200°C/fan: 175°C/Gas: see manufacturer).

Meanwhile, cook the quinoa in salted, boiling water according to packet instructions.

Fry the doner-style kebab chunks in a little oil until crispy. To create the marinade, mix together the garlic, mustard, sugar and vinegar. Add 1 tbsp oil. Mix the warm quinoa and zucchini in with the marinade. Carefully fold in the doner-style kebab chunks and herbs. Season to taste with salt and cayenne pepper. To finish, sprinkle with the roasted nuts.

ZUBEREITUNG

Kartoffeln zugedeckt in kochendem Wasser ca. 30-45 Min. garen, je nach Größe, danach abgießen. Kartoffel salzen, pfeffern und im Backofen eingeschlagen in Alufolie ca. 20 Min. (Umluft: 200 Grad/ E.Herd:225 Grad/ Gas: siehe Hersteller) backen oder grillen.

Filetstücke Döner-Art in der Zwischenzeit in Öl knusprig anbraten. Gemüse, Oliven, Oregano kurz mit braten und mit Salz und Pfeffer würzen.

Kartoffel aus dem Ofen nehmen und Alufolie öffnen. Kartoffel in der Mitte längs aufschneiden, etwas auseinanderbrechen und mit Gemüse sowie den Filetstücken Döner-Art füllen. 2 EL Kräutercreme darauf geben und mit Oregano bestreuen.
