INGREDIENTS (SERVES 2)
• 240 g LikeMeat Golden Nuggets
• 400 g potatoes, peeled and diced
• 50 g frozen peas
• 80 ml warm soya milk
• 200 g carrots, peeled and sliced
• 10 sprigs of flat leaf parsley, finely chopped
• 4 tbsp oil
Put the potatoes in salted, boiling water and cover for approx. 20 minutes. Cook the frozen peas for approx. 10 minutes. Drain the peas in a colander, transfer to a small bowl and mash with a fork. Drain the potatoes, mash with a potato masher. Fold in the soya milk and potato purée and season to taste with salt and pepper.
Heat the oil in a pan and fry the carrots over a medium heat for around 5 minutes. Add 4 tbsp water and sauté over a low heat for 5 minutes.
Fry the Golden Nuggets in a little oil and serve with the mashed peas and carrots. Sprinkle over the parsley and serve with ketchup if desired.
