Schnitzel fleishveganexperten

with celery purée


• 2 LikeMeat schnitzels
• 80 g potatoes, peeled and diced
• 200 g celeriac, peeled and chopped
• 20 g margarine
• 100 ml soya milk
• Salt
• Pepper
• Nutmeg
• 100 g mixed fungi (e.g. mushrooms or oyster mushrooms), halved
• 2 small shallots, finely sliced
• 2 tbsp olive oil
• 20 ml brandy (optional)
• 100 ml soya cream
• 2-3 sprigs thyme, plucked


Cook the potatoes and celery for approx. 20 minutes until soft. Drain the potatoes in the pan and mash with margarine and soya milk. Season with salt, pepper and nutmeg.

Fry the mushrooms and shallots in oil until golden brown, add the thyme, add the brandy if using, and cook for approx. 30 seconds. Pour in the soya cream and mix in, season with salt and pepper. Fry the schnitzel in oil until crispy. Transfer onto a plate and garnish with the thyme sprigs.
